Can I just black out the account number with a highlighter tool?
A highlight or filled box is an overlay. The account number stays in the file and comes back if the box is moved or the text is copied. KeptPDF flattens the page so the number underneath is destroyed.
Will it remove every transaction automatically?
No, and that is on purpose. Transactions and balances are figures only you can decide to keep or cut, so you draw a box over the ones you want gone. Names, addresses, and account numbers are detected automatically.
